I have a section of linoleum over some of my heatmats, also stops anything getting underneath

Yes - the stat will control the heat so it won't matter if he burrows underneath.

When I first started, the shop (and the heatmat instructions) told me to stick the mat down with Gaffer tape ...)

Dont. Attach the stat probe to the mat (with heat glue or aquarium sealant) and weigh the mat down with a heavy hide or something like that. If its fixed down it will be a pig to clean.
