I'm getting 2 thermo's, where's the best place for the sensor, I was thinking on the side walls to get the best results on "belly" level

I would put one on the substrate at the cold end and one on the substrate at the hot end (probably next to your thermostat probe?).

same here, i've rubber band-ed the two sensors together rather than using any sticky tape.
