Ok I have been doing research on breeding for nearly a year and I am still a little confused on a few things.

How often should I pair them I read 3 days on 3 days off.But I have also read monthly.
These are my pairings
Het Albino het axanthic to het albino het axanthic

Butter pastel to spider and normal

Albino to het albino

How long should they be paired for? Until I get a lock? what happens if I do not witness a lock?

In theory if I get a good lock is the deed done?

3 on 3 off
If you see a lock before the 3 days are up take him out
There's no need to work him hard
Even If the job is done the female may still not have folicals growing
So keep pairing till
She stops feeding / male shows no intrest in her
Or if your really good palpate if folicals

Now its becoming clearer.

So basically until we know she as follicles she will not be getting pregnant? The reason for the continued pairing.

Yes keep pairing
Until she ovulated She's not gravid (pregnant)
If there no folicals keep pairing a male Then hopefully it will start her off

Just don't over do it with the male a week off here and there won't hurt
And time off to feed and shed
